Spring Rolls with Tofu Bites Sweet Chili
Tofu Bites | Sweet Chili
Ingredients for 2 pers
1 packet of Bumi Tofu Bites Sweet Chili
6 rice sheets
1 tbsp. Sriracha
3 tbsp mayonnaise
1/4 red cabbage
1/2 mango
1/2 cucumber
1 carrot
cilantro
olive oil
Optional: a small handful of salted peanuts, 1 teaspoon chili flakes, zest of 1 lime
Preparation:
Cut the carrot, cucumber and mango into equal bars. Finely chop the red cabbage. Mix the mayonnaise with the Sriracha. For extra zest, feel free to add more Sriracha. Fry the tofu according to the instructions on the package.
Optional: chop the peanuts and mix with the chili flakes and lime zest.
Prepare a shallow bowl of warm water. Wet a clean kitchen towel, wring it out and place on your work surface. Dip a rice sheet briefly into the warm water and place on your kitchen towel.
A few centimeters below the center of the rice sheet, place some sprigs of cilantro. Stay a few inches from the sides. Continue to top with the carrot, mango, cucumber, red cabbage and fried strips of tofu. Drizzle some sriracha mayonnaise on top and serve the rest as a dip. Work or with the peanut crunch.
