Mediterranean bowl with Gyros-style Pulled Seitan

Ingredients
175g BUMI Gyros-Style Pulled Seitan
150g bulgur
1/2 small cucumber
1 red onion
200g (colored) cherry tomatoes
200g canned chickpeas (drained +/- 130g)
1 tsp smoked paprika powder
1 tsp cumin seed powder
Garnish: 2 sprigs of dill
Ingredients vegan Tzatziki
1/2 small cucumber
100g vegetable cottage cheese or Greek-style yogurt
½ clove garlic (finely pressed)
½ tsp lemon juice
Olive oil, pepper and salt
Cook the bulgur according to the instructions on the package.
Cut the cucumber in half and save 1 half for the tzaziki. Cut the other half into thin slices. Cut the cherry tomatoes in half.
Prepare the tzaziki:
Cut the retained half of the cucumber in half lengthwise. Remove the seeds with a spoon. Finely grate the cucumber and drain in a colander.
In a bowl, mix well the yogurt/cheese with the pressed garlic, oil, pepper and lemon juice.
Press the cucumber well so that it loses as much moisture as possible. Then mix it into the yogurt mixture and set aside, covered, in the refrigerator.
Drain the chickpeas and rinse with water.
Put a frying pan on the heat with a small splash of oil. When the pan is hot add the chickpeas and turn the heat to medium-high. Add the cumin seed powder and smoked paprika. Fry for 5 minutes, stirring frequently. Turn the heat low.
Meanwhile, fry up the Gyros Style Pulled seitan pieces in a frying pan with a dash of oil. Make sure the oil is hot before adding the seitan. Fry over medium-high heat and keep stirring.
Spoon the bulgur into a deep plate and drizzle with extra virgin olive oil. Add all components step by step and finish with the Gyros Seitan and tzaziki. Garnish with dill and sprinkle some more sea salt flakes over the Gyros as needed.
