Grilled Zucchini Salad with Tofu Bites BBQ

Ingredients for 2 people

  • 1 packet of Bumi Tofu Bites BBQ

  • 1 zucchini

  • 400g Greek yogurt

  • 1 clove of garlic

  • sunflower oil

  • 20 fresh mint leaves

  • zest and juice of 1 organic lemon

  • toasted sesame seeds

  • olive oil

Preparation:

Finely chop most of the mint and keep some leaves for garnish. Heat some sunflower oil in a pan. Slice the clove of garlic and fry until golden brown in the oil. Keep aside. Mix the chopped mint into the yogurt and grate half the zest into it. Cut the lemon in half and squeeze one half onto the yogurt. Stop any seeds with your palm. Season with salt and pepper.

Cut the zucchini into 1cm thick slices. Grill on two sides on a hot grill pan. Season with salt and pepper. Then briefly grill the tofu bites.

Spoon the mint yogurt onto a plate. Place the grilled zucchini on top of the yogurt and squeeze a few more drops of lemon juice over it. Next, place the tofu on top of the zucchini. Top or with some good olive oil, the seasoned garlic, the mint leaves, the remaining lemon zest and the toasted sesame seeds. Season with salt & pepper.
