Middle Eastern tomato stew with BUMI Natural Pulled Seitan
Number of servings: 2
Ingredients:
1 yellow onion, peeled
2 cloves of garlic, peeled
1 red pepper
3 tablespoons of olive oil
1 tbsp cumin powder
175 g BUMI Seitan Natural
1 tin (400 g) of diced tomatoes
salt and freshly ground black pepper
10 g flat leaf parsley
hearty bread to serve
Preparation:
1. Cut the onion into thin rings and the garlic into thin slices. Cut the pepper into thin strips.
2. Heat the olive oil in a frying pan over medium-high heat and fry the onion and garlic for about 5 minutes. Add the cumin powder and fry for another 1 minute.
3. Add the paprika and BUMI Seitan Naturel and fry for another 5 minutes. Add the tomato cubes. Fill the can half full with water to remove the last bits from the can and add them to the pan. Stir well, taste and season with salt and freshly ground black pepper. Turn the heat down to low and leave to simmer for 10 minutes.
4. In the meantime, finely chop the parsley (including the stems) and slice the bread.
5. Turn off the heat, sprinkle the parsley over the tomato sauce. Serve the tomato stew in the pan on the table and use the bread to dip into the sauce.
