Yellow curry with BUMI Asian Tempeh & Rude Health Almond Drink

Ingredients

1 package (175g) BUMI tempeh Asian

400 ml Rude Health Almond Drink

200 g rice noodles

1 red pepper

65 g yellow curry paste

1 l vegetable stock

0.5 red pepper

1 onion

3 garlic cloves

1 small broccoli, in florets

100 g bean sprouts

1 lime

1 tsp turmeric

1 tsp curry spices

0.5 tl paprika powder

1 tbsp olive oil

Fresh coriander

Black sesame seeds

 

Method

1. Heat a deep pan on the stove and fry the onion and garlic with the yellow curry paste, curry herbs, turmeric and paprika.

2. Add the red pepper and fry for 3-4 minutes.

3. Now add the Rude Health almond drink and vegetable stock and bring it to boil. Turn down the heat a little.

4. Add the broccoli florets and rice noodles and stir well. Finally add the red pepper.

5. Bring the soup to boil and simmer for 20-25 minutes, until the broccoli is soft. Stir it regularly so that the vegetables and rice noodles do not stick together at the bottom.

6. In the meantime, heat some oil in a frying pan and fry the BUMI tempeh in it for a few minutes so that it is nice and warm.

7. When the broccoli and rice noodles are soft you can turn off the heat. Add the juice of 1 lime and the bean sprouts and stir well again.

8. Divide the soup into bowls/deep plates and add the BUMI tempeh to the soup.

9. Garnish the soup with fresh coriander, black sesame seeds and possibly extra red pepper.
